Mushroom varieties vary in water content when picked fresh from 50% – 80% water. Here at Mendham Mushrooms we dehydrate several varieties of mushrooms so that they can be stored and enjoyed year round. Some mushrooms even taste better after rehydrating than they do fresh.
We use a dehydrator at 90 degrees to 120 degrees for 8-12 hours depending on the species and sizes.
Dehydrated mushrooms last for about a year kept airtight and in a dark cupboard. When we say “last for about a year” because mushrooms kept longer lose some of their flavor and nutrients.
If your buying dried mushrooms most recipes call for rehydrating before or during cooking. If you are making soup, don’t worry just throw the dried mushrooms in. Otherwise follow these instructions and watch the videos.
The easiest way to rehydrate mushrooms quickly, is to place them in a glass bowl covered with warm water for 20 to 30 minutes. The quicker way is in a pan with water and simmer gently adding water as needed slowly until fully rehydrated. If you use too much water and have some left over, not to worry it is mushroom broth that you can also use in many dishes. We cook rice or pasta in it for added flavor.
