Hen of the Woods, also commonly known as Maitake, is an early fall mushroom commonly found growing around the base of Oak and maple trees. This tasty mushroom grows in massive tight clumps. Some clumps can grow to be larger than 30 pounds! These monster mushrooms have a strong savory, earthy flavor with a peppery finish. Hen of the Woods is a very finicky mushroom to grow as it absorbs the flavor of its environment, especially its substrate. Due to this quality, cultivated maitake will always have less favor than these growing wild on the base of trees. Here at Mendham Mushrooms, we exclusively cultivate our Maitake on the base of trees on our completely organic 10 Acre property! We are copying natures method and no one does it better than mother Earth.Â
Hen of the Woods has been used in Japanese, Korean and Chinese medicine for centuries to prevent liver disease and prevent Cancer. Researchers today agree that this mushroom can fight the growth and reproduction of cancerous cells but that it also help keep arteries healthy, fight cold and flu virus, regulate blood pressure, and assists in immune function.
