Black Trumpet mushrooms (Craterellus cornucopoides) have been described to be one of the tastiest mushrooms ever used in a kitchen. They are famous for their rich, earthy, and smoky taste. They have also been said to taste slightly sweet with hints of blue-cheese. Their easily recognizable funnel shape can range from black to gray to even brown. The underside of a black trumpet mushroom cap is smooth or slightly wrinkled. It has no gills, teeth or pores. Black Trumpet Mushrooms have a smooth suede-like feel to them and can be puled apart into sinewy strings. Black truffle, another name for black Trumpets mushrooms, have a rich, smoky flavor and a fruity aroma. In their fresh form, these mushrooms are especially potent and full of flavor. These mushrooms are not easily cultivated and can only be grown in the wild during July to October in the Northeast US.
